This is my Christmas dinner moments before it hit my mouth. Homemade mashed potatoes topped with Crock-Pot cubed steak with mushroom and onion gravy. I started the cubed steak and gravy yesterday, put it in the fridge overnight, took it out this morning to skim off the fat, then put it back in the Crock-Pot and finished cooking.
As for the mashed potatoes, they were stupid easy - 10-minute boil, 10 minute rest on the stove eye after turning it off, drain, then back in the pot to mix in plenty of pink Himalayan salt and cracked black pepper, followed by a stick and a half of unsalted butter cut into chunks, followed by folding in heavy cream to really enrich the potatoes.
The gravy paired up nicely with the mashed potatoes, and the cubed steak was fork-tender. And it was all delicious.
Hopefully, this will make up for posting Josh's Mama's Grinch Christmas Dinner fiasco last night. 😋
