While in Pismo Beach, we decided to cook a couple of dinners at home. Because apparently, a vacation isn’t complete without turning the rental kitchen into a Rozario kitchen. 😂
First up: homemade green enchiladas with black beans. I roasted 14 Anaheim chilies, along with white onion and garlic, to make the green sauce from scratch. The black beans were puréed because some people in our family apparently believe beans should have the consistency of baby food. And God forbid they see the onions. Groc helped me with the black bean recipe, so at least I had a sous-chef!
The next night, we cooked four very large filet mignons. Mark was given one simple instruction from his brother: “Pink in the middle.” Apparently, that was not a detailed enough cooking directive. The result? Our half-vegetarian family member couldn’t eat theirs. The rest of us? We were delighted. Leftover steak for DAYS!
Saturday’s gourmet extravaganza featured steak, asparagus, and Costco mashed potatoes. 🤢 (We all have our culinary limits.)
Sunday, it was beef stroganoff with carrots and asparagus. And Monday? You guessed it… leftover beef stroganoff! Oh, the boring carrots are for Mark and I’m asparagus.
I’m loving this! Less cooking, less waste, and dinner is already handled.
So, what’s cooking at your house? And, more importantly, how many nights in a row can you serve leftovers before your family engages in conflict?
Send help......and a storage unit. He kept the m'fer a secret. Maybe I should come home with a pair of $1000 shoes.
Congratulation to @SGKusmertz, @bek1, and @wilbner. Your questions were chosen for tonight’s Ask Joe and the Panelists.
@SGKusmertz If you could have one song play when you enter a room, what would it be?
@bek1 Do you usually feel excited or stressed out about going back to school after summer break?
@wilbner What was the best prank you’ve ever pulled?
