spent 7 hours cooking a brisket. it turned out pretty awesome.
cooked it an hour per pound, plus some extra. soaked it in coffee the last few hours in the egg. the meat was insanely tender - perfect. but some of it was stringy. you know what i mean? thoughts on that?

I got a call from my oldest son this morning that he’s in the hospital with possible pneumonia! He’s staying overnight.
I’m all by myself and I can hardly stand not knowing what’s going on.
